I decided to make this just for a fun afternoon baking and it turned out better than I thought. Of course these got over in minutes and then we decided to make another batch and then we decided against it because it felt like a lot of hard work. But then, I finally, decided to share the recipe with y'all!

Well, I am definitely too much into the holiday spirit and I guess I am digressingπŸ˜‚πŸ₯³. So, let's get to the point.

πŸ₯˜ Ingredients You'll Need to Make these Christmas Tree Cookies:

  • All-Purpose Flour -Flour is important to form the base of the cookies.
  • Cornstarch -Cornstarch helps binds the cookie. It makes it chewy and crunchy around the edges
  • Melted Unsalted Butter - For a shortbread cookie, you need about a cup of melted unsalted butter.
  • Pinch of Salt -Since we are using unsalted butter. If you are using salted butter then you can skip salt.
  • Pure Vanilla Extract -You can replace vanilla with either Almond extract or peppermint extract.
  • Granulated Sugar -Dfor the touch of sweetness in our shortbread Christmas cookies we need granulated sugar.

For the Sugar Glaze

  • Powdered Sugar -This is different from granulated sugar. Much finer and better for the glaze.
  • Milk -Use milk as per requirement.
  • Honey or Corn Syrup -Honey or corn syrup is used for the binding to hold its shape.
  • Vanilla Extract -Instead of vanilla extract you can use almond extract or peppermint extract.
  • Green Gel Food Color -Gel food colors are better since you don't have t add a lot and you still get that dark color which you want.

STEP 1: MAKE SHORTBREAD COOKIES

  • Combine Butter, Flour, Cornstarch, Kosher Salt, Vanilla Extract and Granulated Sugar in a food processor and make a dough
  • Chill the dough in the refrigerator for about 3-4 hours
  • Roll the Cookie dough to about 1/2 inch thickness
  • Use a cookie cutter to cut the cookies into Pine tree shapes
  • Place in a greased baking dish
  • Bake for 10 min. After it gets baked, allow to cool down to room temp. before decorating it.

Since it's a shortbread cookie, there is no use of eggs in the recipe.

Finally, when you are about to decorate these Christmas Shortbread cookies, you gotta make an icing.

STEP 2: MAKING THE ICING

  • For the icing, I use Powdered Sugar (a lot of it), Almond Extract or Peppermint Extract or Vanilla Extract (any flavour you want), Honey or Corn Syrup, milk, and finally, green gel food colouring.

If you don't want food colouring you can totally skip it. But, I figured, since it's the holidays and people love colours so!πŸ˜„

When it comes to baking cookies, I am a pro. I have been baking them since the age of 4. Well, not to brag about it, but I am pretty good at this.

So, here are some bonus tips that I guess will help you while you are baking these Buttery Holiday Shortbread Christmas Tree Cookies.

  • Corn Starch:Do not forget to add Corn starch along with flour while making the holiday shortbread cookie dough. Corn starch helps the cookies hold their shape. Corn starch makes the cookies chewier. Corn starch makes the edges of the cookies crispier. Guys! there are so many advantages of corn starch.
  • Chill the Dough:Chilling the dough is super important especially when you are making shortbread cookies with icing. I prefer chilling them twice! Once when you've made the cookie dough, wrap it in plastic wrap and keep it in the refrigerator for 30-minutes to 1-hour. (you can also freeze for 20-minutes if you're in a hurry). Next, when you've cut them into shapes refrigerate for another 15-minutes.
  • Do not Roll the Dough too thin: When you are rolling the dough, make sure you are not rolling it too thin. Ideally, if you ask me for measurements, I am gonna say it is 3/8 inch thick. But, hey don't be so technical about it. It's a holiday cookie, not some baking school. Just make sure they are thick and not too thin. Or else when you dip them in the glaze, you might have a hard time.

πŸ€” Make-Ahead & Storage Instructions:

  • To Make it ahead of time, you can prepare the cookie dough and keep it covered in plastic wrap in the freezer for 5-7 days. But, when you are ready to use it make sure you thaw it overnight in the refrigerator or for 2-4 hours on the countertop.
  • To Store these cookies you can keep them covered in an air-tight container such as Tupperware. You can keep them on the countertop for 3-4 days. To store it for a longer time, cover it in plastic wrap and then place it in an airtight container. Freeze it for weeks.

INGREDIENTS

  • 1 Cup Melted Unsalted Butter (2 Sticks)
  • Β½ Cup Granulated Sugar 100g or 3.55 Oz
  • 1 Teaspoon Pure Vanilla Extract you can replace this with Almond Extract or Peppermint Extract
  • 2 Cups All-Purpose Flour more for dusting the surface
  • β…› Teaspoon Salt
  • 1 Teaspoon Corn Starch
  • Ice Cold Water as per requirement

Green Icing

  • 1 Cup Powdered Sugar
  • 4 Tablespoons Milk
  • Β½ Teaspoon Pure Vanilla Extract
  • 1 Teaspoon Honey or Corn Syrup
  • 2 Drops Green Gel Food Color
  • Red and Green Christmas Nonpareils Sprinkles

INSTRUCTIONS

  • PreHeat Oven to 350F or 180C. Grease a baking ray with cooking spray and keep it aside.

  • In a large mixing bowl mix All Purpose Flour with Granulated Sugar, melted Unsalted Butter, Vanilla Extract, Corn Starch, and a pinch of salt. Mix well. Add 1 teaspoon of ice-cold water and knead the dough with your hands. Add water as per requirement. Make a soft dough. See the image for reference. Chill the dough covered with a plastic wrap, in the refrigerator for 15-minutes

  • Now, flour the surface. Roll the dough lightly making sure that it is about 3/8 inches thick. Now use a Christmas tree shaped cookie cutter to cut out small christmas tree shaped cookies. Place it on a baking sheet greased with cooking spray. Bake it in a preheated oven at 350F or 180C for 10-11 minutes. Do not touch after it is baked. Let it stay in the baking tray for another 10-minutes at room temperature. Then transfer to wire rack and let them cool down for another 10-minutes.

  • In a small bowl mix powdered sugar with honey, milk, and vanilla extract. Mix well. Add a few drops of green gel food color and stir well until smooth.

    Now dip the sugar cookies individually in the glaze. Drip the excess by holding it vertically. Place it on a baking sheet.

  • Now add red and green Christmas Nonpareils Sprinkles and let the cookies sit for a while. And, then Enjoy!

Notes

  • Do not forget to chill the dough. If you can chill the dough for 15-minutes before popping it in the oven, then that's even better.
  • Do not forget cornstarch.

Make Ahead Instructions:

  • You can make the dough 3-4 days ahead of time and then when you want to bake, let it thaw in the refrigerator overnight or on the counter for 2-hours.

Storage:

  • You can store these shortbread cookies for 3-5 Days covered in an airtight container at room temperature on the countertop.
  • To store it for a longer duration, keep it in an air-tight container, wrapped with plastic wrap. Place it in the refrigerator or freezer.
