These grilled Greek pork chops are marinated in a simple mixture of fresh lemon juice, herbs, garlic and olive oil, then tossed on the grill for about 5 minutes. They're flavorful, they're delicious and they're one of my go-to summertime meals because they take close to zero brain power to put together. 🙂

Serve them one of these 15 Healthy Easy BBQ Sides and a plate full of watermelon wedges. Then finish off the meal with a grilled pineapple dessert or homemade ice pops. Your family will be digging your summertime grilling prowess!

Tips for making these Greek pork chops:

The pork chops can either be marinated in a shallow dish or a resealable plastic bag. I prefer the bag because it allows me to massage the marinade into the pork chops.

Marinate the pork chops for a minimum of 30 minutes, but longer is better. If you have 4 hours to spare, I highly recommend letting the pork chops marinate for that long to allow the flavors to seep in as much as possible. Be sure to refrigerate the pork chops while they marinate.

The key to juicy pork chops is to cook JUST until they reach an internal temperature of 145 degrees F. Overcooking them will produce dry meat. No one likes dry chops!

How to long to grill pork chops:

This recipe calls for ½-inch thick bone-in pork chops, which cook very quickly. The USDA recommends an internal temperature of 145 degrees F for pork chops. Over medium heat, it should take 2 to 3 minutes per side to grill the chops.

For thicker pork chops, allow for additional cooking time. Keep a meat thermometer on hand and insert it into the thickest part of the pork chop to measure the internal temperature.

What’s in this grilled pork chop marinade?

This marinade uses standard pantry ingredients and couldn’t be easier to put together!

Fresh lemon juice (this hand-held juicer is my favorite! – affiliate), lemon zest, olive oil, fresh mint and parsley, garlic and salt. Super simple!

What to serve with these pork chops:

These match up well with Sauteed Snap Peas, balsamic grilled vegetables or my healthy BLT slaw.

For a healthy starchy side, pair the pork chops with grilled potatoes or rice pilaf with orzo. Two of our favorite sides throughout the year!
