What is Haluski?
I love Haluski. I mean, really, who doesn’t? This noodles and cabbage dish is commonly referred to as Haluski. Haluski is a Noodles and Cabbage dish of Polish and Slovakian origin, although there is some disagreementfrom the Ukrainians and Hungarians. No matter where it originated from, it is delicious comfort food. It is sure to be a hit with your family and friends. Now I don’t think that the original version had bacon in it, but you know me well. Savory gives the dish that much more delicious flavor.
How do you make Haluski?
First, boil the egg noodles in a large pot of water according to the package directions and drain well. Meanwhile, melt the butter in a large skillet over medium heat. Add the bacon and onion to the skillet until the onions are soft and the bacon is almost completely browned. Reduce the heat to low and add the garlic. Cook and stir for about 30 seconds. Then add the cabbage and continue cooking and stirring until the cabbage is tender. Add the cooked egg noodles to the cabbage mixture and toss to coat. Season with kosher salt and plenty of fresh ground black pepper.
Don’t overcook the noodles because you don’t want them to break apart. Cook them slightly al dente.
Get your bacon crispy, as crispy bacon tastes better and holds up better in this dish.
Chop your cabbage into bite-size pieces.
This dish is best as soon as it is cooked. I have had it sit for a bit, and it still tastes good. But right out of the pan upon completion is phenomenal.
If you are looking for a heartier meal, then add thinly sliced pieces of kielbasa, chicken, or beef sausage at the same time that you add the onions.
Use sweet cream butter.
Season with salt and plenty of fresh ground black pepper.
Store leftovers in an airtight container in the fridge for up to 3 days.

Instructions

I’ve made this for several years and it’s delicious. It’s too much for just the two of us so I freeze smaller containers and it freezes great. I put a couple strips of bacon on top so they’re crispy when I thaw out the dish. Great with pork chops or a pork loin.

This was delicious! I did cook the bacon first and drain off the grease, which yielded 1/4 cup. I used half of the bacon grease and half of the amount of butter. I reserved the crispy bacon and put it in at the very end. I used German egg noodles that I found at Aldi…I think that put it over the top.

First time making this recipe. Would definitely alter the directions. Brown the bacon first and remove it from the pan. Then add the butter to the rendered bacon fat to saute the onions. Why? Because adding the butter first just simmers the bacon in the butter, it does not brown and crisp. Finally, do not add the bacon back into the pan until the very end when you add the cooked noodles.

Yum!! I love this stuff. When I was a kid I never liked cooked cabbage but after trying this I love it. I have fixed this with bacon and kielbasa and sometimes with just the bacon, sometimes I add onions and sometimes I add potatoes, it works with just about anything and tastes fantastic! My mother had this dish and got the recipe from an old family friend’s mother who was German before I was born and my mom fell in love with it and said she craved and made it all the time while she was pregnant with me. She made this last weekend out of the blue and it was the first time I had ever seen or eaten it and it was delicious. I’m surprised she had gone so long in making it. my Grandma from Czech made haluski skapusta ::with home made noodles.. yepp all over the kitchen and dining room we had long strings of noodles drying out 5~~10 yrs old way back in 50s adding all veges chopped well fried with oil.. she made 8 qts of haluski enough to feed 3 families…She taught NYC best chefs how to make very light dough.. when making peaches in dumplings..the knife would simply float down the dumplings body.. chefs said cant be done she did it monthly.,..it was true joy to watch her cook !

A hulaski lover. Many variations to the basic recipe. I like to add julienned carrot and a TBL of capers. I make a huge patch in my cast iron skillet which gives a golden hue to the onions and cabbage and the burnt pieces are heavenly.

I made this with regular egg noodles, which I had. I’ve never noticed Amish noodles before. I suspect it’s a regional thing. It was very easy to make and quite delicious. I included the cayenne and actually think it could use a little more. It wasn’t spicy. I will mention I had a bite or two where the cabbage was a little bitter. I believe that was the core or heart, so stay away from that. I’ll definitely fix again oh yes, I diced some leilbasa sausage- maybe a 1/2 cup. It could have used more.

My late Mother was Polish and never mentioned this recipe to me . I found the Amish noodles , extra wide , at WalMart today. Have been making this for years family loves it if you can not find Amish noodles and out of regular noodles my 1 daughter likes to use bowtie noodles usually the smaller ones also 15 to 20 minutes before serving add on top chedderwurst sausage whole cover with lid I like it but hubby does not eat them only likes the bacon

My Slovak family has been making this for years.
My ingredients are the same as yours, however, I cook them in a different order.
Yes, bacon cooked first if using and reserve for later. To the reserved bacon grease add butter and melt.
Add cabbage and cook about 20-25 minutes or so, then add onions and grarlic and continue cooking over low heat until gabbage/onion are golden brown. I find cooking the onions before the cabbage results in an overdone texture…my 2 cents…

The origins of Haluski (pronounced ha-loosh-key) are debatable, but can be claimed in some form or another by the Polish, Slovaks, Ukrainians, and Hungarians. It's a simple comfort food dish consisting of either egg noodles or a potato dumpling sautéed with cabbage, onion, pork, and sheep or goat's cheese.
There is one major difference between Poland's hałuski compared to Slovak's hałuski: Poland's version is an entrée while Slovak's is an ingredient in an entrée. Spruce Eats has two recipes, one for hałuski from each country. The Polish version calls for egg noodles, butter, cabbage, and onion.
How do you store haluski? Because of the fried cabbage, haluski will last for up to 3 days in the refrigerator. Store in a tightly covered container to keep the cabbage fresh, and to prevent odors from seeping into other foods in the fridge.
The term halušky can refer to the dumplings themselves, or to a complete dish containing other ingredients. Typically the dish described is noodles with sauteed cabbage and onions.
The best side dishes to serve with Haluski are beef stroganoff, Swedish meatballs, kielbasa potato soup, stuffed cabbage, pierogi casserole, baked salmon, green beans with bacon, grilled chicken thighs, corned beef hash, caramelized onions, chive potatoes, pickled beets, creamed spinach, smoked pork chops, and green ...
Cabbage. The outer layer isn't going to be eaten—the leaves are tougher and undesirable to many—so why wash cabbage? There's a good reason: Worms or other insects could be inside the cabbage, so to be safe, follow these steps for cleaning and washing it.
Amount of eggs: While not all pasta contain eggs, eggs are a requirement to make kluski noodles and of course egg noodles. In order to make egg noodles, one must use one egg per cup of flour, but in order to make kluski noodles one has to double the doses of eggs.
It has an outstanding nutrient profile and is especially high in vitamins C and K. In addition, eating cabbage may even help lower the risk of certain diseases, improve digestion, and ease inflammation. Plus, cabbage makes a tasty and inexpensive addition to a number of recipes.
Haluski (also spelled “halluski,” “halusky,” and “halushki” — the last is how I tend to hear it pronounced) seems to have its roots in similar dumpling-based dishes from several European countries, most prominently the Czech Republic, Slovakia, and Hungary.
Freezing and thawing can have an effect on the texture of these water-rich ingredients. With that being said, you can still freeze this recipe if you don't mind the texture change. Store your haluski in an airtight container and freeze for 2-3 months. Let your leftovers thaw in the fridge overnight before reheating.
Tip: When chopping cabbage for haluski, I cut the cabbage in half with a sharp knife and then into quarters. When it is quartered the core is more exposed and easier to remove from the cabbage leaves. Once the core is removed, I cut one more time into eights, then chop the leaves for sauteing.
Cover and refrigerate cooked cabbage within two hours of cooking and use within 3-5 days. If the cabbage is part of mixed dish like cabbage rolls, store covered in the fridge and use within 3-4 days. Freeze fresh or cooked cabbage in airtight containers or freezer bags for 10-12 months.
Haluski is a traditional Eastern European dish that has roots in the cuisine of Poland, Slovakia, and Ukraine. It's a simple and hearty 'peasant dish' that consists of just a few cheap ingredients.
Although it is considered a national dish in Germany and is known under its German name in English-speaking countries, it did not originate in Germany and is also a traditional and ubiquitous dish in Central and Eastern Europe.
