These Chicken Parmesan Roll-Ups are an easy dinner recipe that your whole family will love. It’s like chicken parmesan but rolled up with mozzarella, basil, and tomatoes.

CHICKEN PARMESAN ROLL-UPS

Here’s a another piece of heaven all rolled up into these Chicken Parmesan Roll-ups. We make this Easy Baked Chicken Parmesan at least once a week. This version is a little more flavor intensified!

You can use chicken cutlets from your grocery store which are already thin flat pieces of meat or just cut a regular chicken breast lengthwise down the middle to create thin pieces of chicken.

These chicken breasts were from Costco and extremely thick so depending on the size you may need to pound them thinner even after cutting them in half.

Place them seamside down in a baking dish and top with your tomato mixture. I like that you use canned tomatoes here because I don’t always have fresh on hand.

You can also skip the tomatoes and use marinara sauce. My littles prefer the marinara sauce version but us adults like the tomato version.

Top with your panko breadcrumb mixture. This makes the dish.

Chicken Parmesan Roll-Ups

These Chicken Parmesan Roll-Ups are an easy dinner recipe that your whole family will love. It's like chicken parmesan but rolled up with mozzarella, basil, and tomatoes.

Ingredients

  • 1/4 cup olive oil
  • 1 onion, chopped fine
  • 6 garlic cloves, minced
  • 1 (14.5-ounce) can Italian style diced tomatoes, undrained
  • 1/2 cup chopped fresh basil
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 6 thin-cut, boneless, skinless chicken cutlets, about 1 1/4 pounds (or slice regular chicken breasts in half lengthwise to create your own cutlets)
  • Salt and pepper
  • 1/2 cup Italian seasoned panko bread crumbs

Instructions

  • Adjust oven rack to upper-middle position and heat oven to 475 degrees. Heat 2 tablespoons oil in medium saucepan over medium heat. Add onion and cook until softened, about 3 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add tomatoes and simmer until slightly thickened, about 5 minutes. Take mixture off the heat and stir in half of basil. Pour half of the sauce in the bottom of a 9x13 baking dish.

  • In a medium bowl, combine mozzarella and Parmesan; reserve ½ cup of the mixture. Add remaining basil to remaining cheese. Pat chicken dry with paper towels and season with salt and pepper. Top chicken with basil-cheese mixture, leaving 1-inch border at bottom of cutlets. Roll up tightly and arrange, seam side down, in prepared baking dish.

  • Toss bread crumbs with remaining oil in small bowl. Top chicken with reserved cheese, remaining sauce, and bread-crumb mixture. Bake until chicken is cooked through and crumbs are golden, 15 to 20 minutes. Depending on the thickness of your chicken breasts you may have to cook them longer 10-15 minutes longer or when internal temperature reaches 165 degrees F. If your breadcrumbs get too brown for your liking after about 15 minutes of cooking cover with foil for the remaining baking time. Serve.

    So darn good. I made spaghetti noodles to go with it and sauce was so good with spaghetti noodles. I added spinach kale mix greens, chopped them and put it with the sauce after everything was cooked. Delicious recipes in this site.

    These were delicious!! I made them for my daughter’s sleepover and everyone loved them!! The only concern I had was the cooking time-I tried convection bake @ 475 which adjusted to 375. Cooked for about 20 min and chicken was still very pink. Had to cook another 15-20 min…maybe next time I’ll just not use convection but I am a little paranoid when cooking chicken:) Thanks for this delicious recipe!!

    Hello I am from Australia and sometimes have trouble converting measurements and trying to get compatible ingredients here in OZ, if you don’t mind could you answer one question in particular how much is one stick of butter in ozs or grams? and relating to the above recipe, which I cannot wait to try, could you use boneless chicken thighs?       Yes, you can bread them before but you need to make sure to watch to make sure the breading doesn’t brown too much. You can cover it with foil if it gets too brown.

    I just made this dish and I had to stop in the middle of eating to tell you how amazing it is!!! I used roasted garlic diced tomatomes and added a bit less minced garlic but otherwise I did everything exactly the same. I think this is my new favorite dish!! Thanks for posting!

    This looks really good and will make this tonight for dinner! 🙂 I just have one question though, is the cooking temperature really 475 degrees? That seems pretty hot so I was just wondering if it was a typo and supposed to be 375?

      No it’s definitely 475. Because it cooks for a short amount of time it needs to be that high.

    I made these tonight for a birthday dinner party. Everyone loved them! I rolled them in a flour/egg/bread crumb mixture and lightly pan fried them before putting them in the oven. Was delish as I’m sure none breaded would be as well. Kudos for a great twist with an old recipe!

    I made these roll-ups tonight and they were delicious! The chicken was so tender and it was cheesy and so flavorful. And, I had no expectations of my kids even trying it much less liking it (even though I still put some on their plates) but they both liked it.     About the bed … OMG! … I do the same thing, say I love my bed every night when I fall into it. It feels like I’ve gone to heaven. About five years ago we bought a king-sized latex foam bed and it is amazing. We call it our magic-healing bed because if we go to bed and have any aches or pains, it is all better when we wake up. We have a family member who house-sits for us when we go out of town and he begs to come so he can sleep in our bed.
